The freshest oysters @ Jim Wild’s oysters

Fun fact; Jim once held the world oyster shocking record 30 oysters 2 and 34 seconds! How amazing is that! Whilst his record might have been overtaken, his oysters are still being sold and at such a high quality.




This is a family business and we loved this operation. Their oysters certainly are their passion. As mentioned, Jim Once held the oyster shucking world record. His passion has been passed on to his daughter Sally who has taken on this pearl of a business. She absolutely loves the profession.




The oysters are farmed in the pristine waters of the Crookhaven and Shoalhaven rivers. What they harvest is sold fresh at their shop, with a few Sydney restaurants in the know collecting fresh from site. Jim Wild’s oyster farm produces both Sydney rock oysters which are smaller sweeter and they also produce some beautiful plump Pacific oysters. They have some giant Pacific oysters, they are huge. We got stuck into one, it was so big it took half a bottle of tobacco to season and two mouth FULLS to finish this super fresh and tasty oyster, a meal in itself.
