Noble Roasters is the revamped version of Project 2 Waterloo. Whilst that was a good shop, this has taken up the occupancy of the shop next door as well, converting it to very large space. It has dark and industrial feel to it, and an expansive coffee bar showcasing the coffee equipment. They do a lot of roasting, some in store and some off site too.
The store is all about the coffee with plenty of brewing options including single origin filter coffee, nitro, and v60. In addition, they have great milk based coffees, served in beautiful ceramic cups, and also flavoured lattes. We tried a coffee flight; with a latte, batch brew and espresso.
If you’re not into your coffee, plenty of other options are available including chai and beautifully brewed teas.
Now they’re a larger store with longer opening hours, they have breakfast and lunch menus. From eggs Benedict, granola, chia pudding, mushrooms on toast, scrumpets (or sourdough crumpets), salads and even oysters, it is an extensive and quite sophisticated menu. We tried their baked eggs, packed with flavour and served with two slices of sourdough toast, making for a decent portion.
You can buy in-house baked muffins and cookies as well as takeaway.
