Coffee roasting is expensive and as such it needs to be your passion. That it is for these roasters who put their heart and soul into their product. To cater for the smaller brewers, there is a warehouse in St Peters that supports this by renting the coffee roaster out to a number of Sydney’s best independent coffee roasters. This place is known as collective roasting solutions – Good news, they have opened a specialty coffee pop up on Enmore Rd, Enmore.
They do serve pastries from Nutty By Nutorious but the collective roasting solutions pop up for the most part is all about the coffee. The pop up gives you the opportunity taste the passion of these roasters first hand. The brew bar has a bright open set up, with their coffee being displayed in store and a few tables and chairs to enjoy one cup or more. The shop is stocked with all of the implements and coffee needed to produce a quality brew at home.
They say variety is the spice of life and you will certainly get that at this pop up with them featuring the produce of a different specialty coffee roaster each week. We were fortunate to have a cup of geisha coffee to start.
The coffee roaster featured on our visit was from ‘bean of a tree’ coffee co, who has a small operation selling out of the markets in the corso at Bondi Junction. The coffee variety sampled from this roaster was a red bourbon, source from the Pochuta, Chimaltenango region of Guatemala. A nice coffee served black and dare I say, with milk. With a red apple acid, as well as sweet maple undertones.
