I found this restaurant Pearl Diver Oyster Bar and Bistro right next to my hotel (Rydges) and booked to dine by myself.

This doesn’t phase me, for if the menu looks good, I’m happy to sit up at the bar. I begin with a cocktail from their amazing menu, and opt for one that is nice and sweet, called the ‘counter punch’ using pisco, raspberries, and egg whites, ingredients that I love!

This @pearldiverco is an oyster bar and restaurant where you can get an oyster happy hour from 5-6 or after this time, you can still order oysters but also plates from the larger ala carte options.

I ordered a few oysters (you can also pick the topping). I’m always keen for bread, so I order one of their freshly baked foccacias, nice and crusty with a soft interior, served with a herbed butter.

I also order the Raw Kingfish with a Clarified Gazpacho, Basil Oil and Tomberry. This was light and beautiful and everything worked well together. A must do dining experience.
