Toby Wilson; “the taco king’ and founder of Ricos Tacos recently collaborated with Rocker, Bondi to bring his take on Mexican street food to the East.
Rico’s Tacos translates to “delicious tacos” in Spanish, and this name is apt, for the tacos are incredibly delicious. We’ve tried a taco or two in our day, and even eaten then around the world including Mexico. We do believe these are the best and most authentic in Sydney.
The lovely Rocker restaurant in Bondi was host to this pop up. Rico’s Tacos created a bespoke menu of tacos, tostadas and churros. We sampled a good range of those on offer, including the soft tortillas and sides:
Chicken verde chicken breast cooked in a tomatillo sauce
Fish taco – masa battered ling, cabbage, Mayo, lime and hot salsa
Beef birria – slow braised beef, dried Mexican chillies and salsa
We also throughly enjoyed the crunchy version, or tostadas:
Kingfish ceviche, avocado Mayo, habanero ash.
The tacos range from $7-$8 which is certainly very reasonable for the size and quality.
Finally finishing up with some traditional Spanish treats, the Churros! A Churros is essentially a long Donut, here with with lemon zest, chamomile sugar and dulce de leche! This was outstanding!
