Black Star Pastry’s founder Christopher might have sold up there but he’s onto a good thing with new cake Hearthe, in Sydney’s Stanmore. Im loving the name, a portmanteau of Heart, Art, Earth and Thé’s (Christopher’s surname) embodying what they’re all about. The pastry chef has a lovely rustic esque cafe with indoor and outdoor seating, a coffee and glass window showcasing treats and plenty of amazing Australian native inspired menu items.

There’s beautiful cakes such as desert lime-goats curd cheesecake with a strawberry gum biscuit and Geraldton wax bubbles or the incredible layered paperbark design of multiple filo pastry to mimic bark with paperbark dacquoise, macadamia, smoked ganache, eucalypt caramel and white kunzea honey. Culinary genius with these flavours!

Other items such as an amazing cinnamon Myrtle twist (my favourite), open fig pastry, delectable almond croissants, saltbush scones, pain au chocolat and even savoury ham and cheese scrolls. There’s also a dine in menu.

Great coffee using Little Marionette, juices and even alcohol.

Certainly worth a visit (or a few)
