Calabria Family Wines – McWilliams meet the makers

Such a special night at the “Meet the Makers: Calabria Family Wines” dinner at Thomas St Kitchen & Bar.

Chef Aman Prasad and sixth-generation winemaker Scott McWilliams put on an incredible experience—beautiful dishes, stunning wines, and the knowledge sharing of each wine pairing with exceptional Mc William’s wine from Calabria Family Wine was insightful.

From the butter caramelised scallops, with a velvety cauliflower puree, it was paired with their 2024 Singe Vineyard Chardonnay. A beautiful start to the dinner.

The perfectly cooked medium rare duck with port jus, was accompanied nicely with the celeriac mousse line and parked with the 2024 660 Pinot Noir.

For the palate cleanser, a bright citrus moscato and elderflower sorbet, topped with lemon zest and fresh mint was cool and refreshing, allowing those taste buds to be ready for the next dish. We loved this little sweet touch to the meal.

The main meal was the MB2 indulgent beef striploin with a smoked beetroot, potato fondant and a bone marrow and red wine jus. This was paired with a deep 2021 Shiraz from the Canberra district.

The end of the evening was the most gorgeous ash brie, with in house baked lavish, candied nuts and Davidson plum jam. Matched with a 10 year old grand tawny; fragrant and fresh with oak complexity, nuts and pecan pie flavours. A silky mouth feel and a great end to the night.
