We were lucky enough to attend a collab between @oppilsydney wine and @lagrillade_redfern for a French inspired feast paired with wine.
The meal saw a seven course menu using French techniques with a modern twist. Below we outine all the dishes we tried on the evening: we had freshly made in house baked bread – a baguette, served with olive oil, followed up with a smooth duck liver pate with port jelly, green peppercorn and toasted brioche.
For the entrees, a French classic was the garlic king prawns, shelled & sizzled with roasted garlic, butter & virgin olive oil, very flavoursome and delicious.
We shared the mains; proteins from the land and sea. First, the Atlantic salmon fillet Sous-vide with basil lime & chilli oil and a pea purée and second, the thinly sliced grass fed Angus sirloin sous-vide with green peppercorn butter and red wine sauce. This paired beautifully with the wine.
Of course, where does a great meal end; with dessert! We finished off with a chocolate mousse and a panacotta.
The food was served with a few of Oppil’s new Shiraz range; with a dry Shiraz and also a Sweet Shiraz. They also made one into Sangria. These wines are produced in the Hunter Valley of NSW Australia. Oppil Produce a hangover free wine, with a higher content of antioxidants, helping our body neutralize the toxicity of the alcohol. Research has shown that it is the oxidants in the wine that lead to hangovers, hence their wine containing a higher content of antioxidants to combat that.
Oppil tell us that “in a recent trial, volunteers consumed four standard drinks of OPPIL Dry Shiraz and reported a 280% reduction in hangover symptoms compared to three other Australian Shiraz.” This sounds pretty good to us, and all we can do is try it out, right. And that we did.
